Leslie - Triple S Whitetail Venison Jerky

Jerky has a sweet and savory smoky flavor, just a touch of heat for a nice throat tingle on those cooler days.Author: Leslie Stennett
Ingredients
- Approx 6 - 7 lbs of meat
- 8 tbsp Worcestershire Sauce
- 1.5 cups Soy
- 2 tsp Liquid Smoke
- 1 tsp melted butter
- 2 tbsp molasses
- 3 tbsp smoked paprika
- 1 tbsp red pepper flakes (if want more heat, add another tbsp)
- 2 tsp meat tenderizer (can leave out if wanting that "cowboy hard jerky feel*)
- 2 tsp onion onion powder
- 2 tsp garlic powder
- 2 cups (packed and tamped) light brown sugar
- fresh ground pepper to taste (i used 1 tsp, but my mother preferred more)
Directions
- combine dry ingredients and mix well
- In seperate bowl, combine wet ingredients, stir well, and then add to dry while stirring
- Thoroughly coat meat, kneading marinade into meat
- Cover, refrigerate for desired length of time
Recipe Note
Recipe developed for deer, but can use on Beef or Deer, marinate longer for deer. Beef tested with Eye of Round steaks trimmed to 1/4 inch. Venison cut just slightly thicker to account for tenderness
