How to maximize the flavor of your Jerky When you marinate your meat, essentially what you are doing is letting the liquid soak into the pores of the meat to absorb the flavor. Here is a tip to help you guarantee the flavor gets properly infused into your meat. Use a vacuum sealer! When you use a vacuum sealer to remove the air from the bag, it opens up the pores of the meat and pulls the marinade deep into the middle of the pieces instead of just soaking in.
